Easy Chocolate Peppermint Cups (gluten free + vegan with sugar free option)

Easy to make, homemade chocolate peppermint cups are made with just 3 simple ingredients. No bake. Perfect holiday treat or for gifting. Gluten free and vegan with no sugar option.

Looking for some simple and fun holiday treats to whip up this year? These chocolate peppermint cups are just the thing. They make a delicious holiday sweet treat or a tasty and inexpensive homemade edible gift idea for teachers, co-workers, and friends.

Ingredients for Chocolate Peppermint Cups

Simple recipes really are the best. You only need 3 simple ingredients to make these beauties.

  • chocolate chips (I used sugar free Lily’s dark chocolate chips)
  • coconut butter
  • peppermint extract or peppermint essential oil

If you want to make them extra special, feel free to add some crushed candy cane sprinkles. I found some organic candy canes without artificial flavors, dyes, and high fructose corn syrup at Whole Foods. You can also find them HERE.

For no sugar option

To keep your treats no added sugar and low carb, skip the candy cane sprinkles and use Lily’s dark chocolate chips which are stevia sweetened, with no added sugar, low-carb, keto-friendly, Fair Trade, gluten-free and non-GMO.

How to Make Chocolate Peppermint Cups

The process is very simple.

  1. Melt your chocolate and create your first layer.
  2. Melt your coconut butter, add peppermint flavor, and make your second layer.
  3. Melt your chocolate again and top off with your third layer.
  4. Top with optional crushed candy cane sprinkles.

There is a 10 minute wait time between layers as you allow each layer to harden in the freezer.

What I love most about this recipe is that it is much more room temperature stable than some of my other freezer fudge type recipes. The chocolate chips harden up nicely. You can easily create adorable holiday gifts for all the people in your life.

And they store beautifully in the fridge for an after dinner treat or for a holiday gathering.

Description

Easy to make, homemade chocolate peppermint cups are made with just 3 simple ingredients. No bake. Perfect holiday treat or for gifting. Gluten free and vegan with no sugar option.


Ingredients

Scale
  • 1 and 1/2 cups chocolate chips (I used Lily’s no sugar chips)
  • 1/3 cup coconut butter (like this)
  • 3/4 tsp peppermint extract OR 2-3 drop peppermint essential oil
  • optional: crushed candy cane (like THIS dye-free brand without corn syrup)

Instructions

  1. Line mini muffin tin with paper liners.
  2. Melt chocolate chips in a small double boiler (a glass bowl over a small pot of water.) Stir until smooth.  Spoon one teaspoon of melted chocolate into bottom of each liner.  Tap muffin tray on counter to get chocolate to settle. Place in freezer for 10 minutes to harden.
  3. Melt coconut butter and add peppermint extract (or peppermint essential oil.) Spoon about a teaspoon of melted coconut butter onto first chocolate layer. Place in freezer for 10 minutes to harden.
  4. Reheat chocolate and stir until creamy smooth.  Top coconut butter layer with enough chocolate to cover completely. Add crushed candy cane sprinkles, if desired.  Place in refrigerator to harden.
  5. Store in fridge.  best served at room temperature.

Notes

🫶 things i’ve noticed:

➡️ i’m rarely hungry between meals (i used to ALWAYS be hungry)
➡️ i have more energy and don’t hit a slump at 3pm 
➡️ i seem to be building muscle more easily with strength training 
➡️ my blood sugar levels fluctuate less (less low blood sugars after 3 hours of no eating)
GRAIN FREE GINGER COOKIES 🎄 i’ve always love GRAIN FREE GINGER COOKIES 
🎄 i’ve always loved ginger cookies but these are hands down THE BEST ones i have ever eaten • chewy, spicy goodness just begging to be devoured • this recipe is from the early days of the blog and continues to be a holiday favorite 

🎄 it’s hard to believe they are grain, eggs, dairy, and nut free 

🎄 the base is made from sunflower seeds • sweetened with REAL maple syrup and a titch of molasses, so no sugar crashes after eating these •  the best part is the fresh ginger • i’m in love ❤️
